American Nightmare vs American Dream
Angle vs Danielson
HBK vs Rock
Madusa vs Charlotte (for promos) or Madusa vs Hayter (for big slappy meat action)
Brock Lesnar vs Harley Race -- I don't know much about Harley but gist I get is dude was hardcore no nonsense badass, so be interested to see what that looked like against Brock in-ring and out.
Honorable Mention:
Hana Kimura (RIP) in WWE/AEW period. With the right mouthpiece she could have been huge (but I'm biased)

Welp time for some probably obscure ish ones:
Miyu Yamashita vs Arisa Hoshiki: battle of the stiff kicks! I think it'd be awesome to have seen these two in the ring.
AnCham vs Asuka/KANA - AnCham is a very underated technician and I think she could have a very fun match with the Empress of Tomorrow.
Jamie Hayter vs Bull Nakano: Hoss fight? I think it'd be fascinating to see the current Jamie vs prime Bull.
Kagetsu vs Emi Sakura: not sure if this one happened irl, but these two would tear the house down. Two of the best to ever do it.
Akira Hokuto vs Maya Yukihi: just.. all the yes.
Crush Gals vs FWC: the legendary tag team vs one of the bright new ones. Almost picked MaiHime for this but I think Hazuki/Koguma would mix better stylistically.
